Soy Kale
Ingredients
- 2 lbs. fresh kale
- 2 tsp. sesame oil
- 2 tsp. minced ginger
- 3 cloves garlic, minced
- 2 Tbs. lite soy sauce

Directions
To prepare the kale, first wash the leaves in several changes of water until the water runs clear. Remove the leaf part from the tough stem and discard the stem. Tear the kale coarsely. Do not pat dry. In a large heavy skillet or work, heat the oil over medium high heat. Add the ginger and garlic and sauté for 1 minute. Add the kale with the water still clinging to the leaves from washing. Sauté for 1 minute and then cover and steam for 2 minutes until kale is softened. Add the soy sauce and serve.
