Spaghetti Casserole

The classic, meatless dish is deliciously baked with plenty of vegetables and a bit of kick.

Ingredients

  • 6 oz. Spaghetti --uncooked
  • 1 medium Onion -- chopped
  • 2 medium Green Bell Pepper -- chopped
  • 2 cloves Garlic -- minced
  • 2 Tbs. Olive Oil
  • 8 oz. Tomato Sauce
  • 2 C. Corn, canned --drained
  • 1/2 C. Black Olives --sliced
  • 1 tsp. Tabasco Sauce -- or to taste
  • 1 tsp. Marjoram
  • Salt and Pepper -- to taste

Directions

Preheat oven to 400 degrees F. In a large saucepan, cook spaghetti noodles in boiling water until just done. (You can tell when noodles are done when you can toss one at the side of a glass drinking glass and it sticks.) Sauté onion, garlic & pepper in olive oil. Add tomato sauce, corn, black olives, Tabasco (to taste), marjoram, and salt & pepper. Place cooked spaghetti in a 9 x 13 inch casserole dish, prepared with non-stick cooking spray and top with sauce. Bake for 25-30 minutes.

  • What a colorful and tasty meatless dish! I expected the same old spaghetti in a dish but this was so tasty and great for those of us who need to cut out the cholesterol! I chose spiral pasta and upped it to 8oz for ease and lowered the Tabasco sauce to 1/2 tsp. because I don't like hot/spicey and mixed the sauce and pasta instead of topping it. I will make this dish over and over!
