Spaghetti Pie
Ingredients
- 1 lb. leftover whole wheat or white pasta with red or white sauce (not a fish sauce)
- 8-10 eggs, scrambled
- 1/4 C. parmesan
- 4 Tbs. milk or cream or 1/2 C. ricotta
- 4 grinds black pepper
- 1/4 C. breadcrumbs
- 8 oz. shredded mozzarella
- Topping:
- 4 oz. shredded mozzarella
- 4 Tbs. breadcrumbs
- 4 Tbs. parmesan
Directions
Preheat oven to 350 degrees.
In a bowl, scramble eggs. Add remaining ingredients except for topping items, making sure everything is coated with eggs. In a greased casserole dish, pour in 1/4 C. breadcrumbs and roll around to coat dish. Add egg mixture and pat down. Sprinkle with topping items and bake for about 30 minutes covered. Uncover and bake at 400 degrees until golden and bubbly.If using leftover pasta with white sauce, prepare some tomato sauce for serving.
