  • 1 1/4 C. white rice
  • 3 3/4 C. chicken broth
  • 1 can diced tomatoes with chilies, drained
  • 1 can kidney beans
  • 1 tsp. chili powder
  • 1 tsp. cumin
  • sea salt
  • freshly ground black pepper

Preheat your oven to 350 degrees F. Take out a two-quart baking dish and add all of the ingredients inside of it. Stir to thoroughly mix the ingredients together. Use aluminum foil to cover the dish and bake for 80 minutes in your preheated oven, or until the rice is tender. When finished, let the rice sit for 10 minutes. Season with salt and pepper to your preference and then serve.
