Spanish Chicken with Pasta
Ingredients
- 1 tsp. olive oil
- 1 lb. boneless chicken breasts, cubed
- 1 clove garlic, minced
- 1/2 C. chopped onion
- 1/2 C. chopped red or green bell pepper
- 2 celery ribs, sliced
- 1 tsp. chili powder
- 1 14 1/2 oz. can diced tomatoes
- 2 C. chicken broth
- 2 C. elbow macaroni or small shell pasta
Directions
In a large skillet heat olive oil over medium-high heat; add chicken. Cook and stir for 3 minutes, or until chicken is lightly browned. Add onion and garlic; cook and stir 2 minutes. Add bell pepper, celery, chili powder, tomatoes and chicken broth; bring to a boil. Add pasta and cook, stirring occasionally, for 15 minutes or until pasta is cooked.
Yield: 4 servings
