Spanish Rice

Ingredients
- 2 Tbs. oil
- 1 lg. onion, chopped
- 1/2 med. bell pepper, chopped
- 2 C. long grain rice
- 1 (16-oz.) can tomatoes
- 3 C. water
- 1 tsp. vinegar
- salt and pepper, to taste
Directions
Saute onion and bell pepper in oil until tender. Add rice and fry until lightly brown, stirring occasionally. Add tomatoes and fry a little longer. Add water, vinegar, salt and pepper, and cover. Let cook over low fire until fluffy, stirring occasionally.
