Spanish Rice with Pork Chops
- 2 Tbs. olive oil
- 6-8 med. cut pork chops
- 1 can diced tomatoes,undrained
- 2 pkgs. spanish rice
- water called for on pkgs. plus another cup
Heat oil in an electric skillet/fry pan, over med heat. Season the pork chops and add to pan,cook until no longer pink. Move pork chops to a plate covered with paper towel to drain. In skillet/pan, add water, rice, and diced tomatoes; bring to a boil, add pork chops. Cover and let simmer until rice is done.
