Spanish Shortbread Cookies with Sugar On Top

In Spanish, these shortbread cookies are called Mantecados and are usually eaten with tea at night. However, we created a seasonal spin for this lovely recipe by cutting them up in stars with powdered sugar on top!

  • 1 C. butter, softened
  • 1 C. white sugar
  • 2 C. all-purpose flour
  • 1 Tbs. lemon zest
  • 1/4 C. powdered sugar

Preheat oven to 350 degrees. Beat butter in a medium size bowl. Add sugar and flour. Mix well. Combine lemon zest. Roll the dough out on a floured surface until about a 1/4 inch thick. Cut with a star cookie cutter. Place cookies on baking sheet. Bake for about 10-12 minutes or until golden brown in oven. Let cookies sit for a few minutes before sprinkling powdered sugar on top.
