  • 2-3 lb. boneless, skinless chicken thighs
  • 1 (28 oz.) can crushed tomatoes
  • 1 large onion, chopped
  • 1 green pepper, chopped
  • 3 cloves garlic, minced
  • 1 tsp. seasoned salt
  • 1/2 tsp. pepper
  • 3 Tbs. chili powder
  • 1/2 tsp. cumin
  • 2 C. chicken stock
  • 2 1/2 C. instant white rice
  • 1 (15 oz.) can black beans, drained and rinsed

Combine the tomatoes, onion, pepper, garlic, chicken stock, and spices in the crockpot. Add the chicken and cover with the mixture already in the crockpot. Cover and cook on high for 4 hours. During the last 30 minutes of cooking, add the rice and black beans. Stir and recover to continue cooking.
