Sparkling Ginger Mint Lemonade

A classic summertime drink is given a refreshing twist with the addition of mint and ginger. On it's own or as a cocktail with vodka, this lemonade is sure to quench your thirst on even the hottest of summer days.

Time needed

20 min preparation + 15 min cooking


  • 2 C. granulated sugar
  • 1 C. water
  • 4-5 sprigs of fresh mint
  • 2 inches peeled fresh ginger
  • freshly squeezed lemon juice
  • club soda
  • vodka (optional)
  • sugar for rimming the glass (optional)
  • lemon slices and fresh mint for garnish (optional)

Begin by making a sugar syrup. Bring two cups of sugar and water to a simmer, until the sugar dissolves, and the syrup is clear. Add three sprigs of fresh mint and the peeled fresh ginger. Let the syrup steep over low heat for ten minutes and then remove the mixture from the heat, strain it, and set it aside to cool.

For a festive touch, you can rim your glasses by dipping the rim of each into freshly squeezed lemon juice and then into granulated sugar. Fill each glass with ice, a few lemon slices and several torn mint leaves. Add one part freshly squeezed lemon juice, one part sugar syrup (or to taste), and four parts club soda. (For an added kick, add one part of your favorite Vodka.) Give it a stir. Garnish with a lemon slice and some fresh mint. Enjoy!
