Sparkling Ginger Mint Lemonade
- 2 C. granulated sugar
- 1 C. water
- 4-5 sprigs of fresh mint
- 2 inches peeled fresh ginger
- freshly squeezed lemon juice
- club soda
- vodka (optional)
- sugar for rimming the glass (optional)
- lemon slices and fresh mint for garnish (optional)
Begin by making a sugar syrup. Bring two cups of sugar and water to a simmer, until the sugar dissolves, and the syrup is clear. Add three sprigs of fresh mint and the peeled fresh ginger. Let the syrup steep over low heat for ten minutes and then remove the mixture from the heat, strain it, and set it aside to cool.
For a festive touch, you can rim your glasses by dipping the rim of each into freshly squeezed lemon juice and then into granulated sugar. Fill each glass with ice, a few lemon slices and several torn mint leaves. Add one part freshly squeezed lemon juice, one part sugar syrup (or to taste), and four parts club soda. (For an added kick, add one part of your favorite Vodka.) Give it a stir. Garnish with a lemon slice and some fresh mint. Enjoy!
