This veggie casserole is an interesting, healthy, and filling side to make this holiday season. It' goes well with everything you are serving for dinner this Thanksgiving.

  • 1 eggplant
  • 1 T. vegetable oil
  • 3 medium size sweet potatoes
  • 3 T. of milk
  • 3 cloves of garlic
  • chili powder
  • salt
  • 100 g. spinach
  • 100 g. mozzarella cheese, shredded

Cut the eggplant into evenly shaped pieces. Fry the eggplant in a frying pan on medium heat with cooking oil. Fry until you have a nice brown color. Let it cool.
Wash the sweet potato and pick them with a fork. Bake in the microwave for six minutes on maximum heat. Scrape out the mushy sweet potato and add it into a bowl and mix with a hand blender. Add the milk, some salt and chili, and the garlic cloves. Mix until you have a nice puree.
Turn the oven on 437 degrees Fahrenheit. In a ramekin, add the eggplants, sweet potato mixture, and the spinach and finish off with the cheese. Bake for 10 minutes or until the cheese has melted.
