This creamy rice pudding takes only minutes to make and only requires a microwave!

  • 1 C. evaporated skim milk
  • 1/4 C. cooked white rice
  • 1/2 of a 1-oz. pkg. sugar-free vanilla pudding mix
  • 2 Tbs. golden raisins
  • nutmeg for sprinkling

Combine all ingredients except nutmeg in a 1-quart glass measuring cup or microwave-safe bowl. Cover with a sheet of waxed paper and microwave on Medium for 11 to 13 minutes, stirring 3 times, until pudding is thickened. Let stand at room temperature for 5 minutes. Serve warm or chilled, sprinkled wit nutmeg.
