  • 1 pkg. Eden Organic Spelt & Buckwheat Gemelli
  • 1 C. black pitted olives, drained
  • 1 can Eden Organic Diced Tomatoes, drained
  • 1/2 C. red onion, minced
  • 1/4 C. fresh parsley, minced
  • Dressing
  • 1/4 C. Eden Selected Extra Virgin Olive Oil
  • 1/4 C. Eden Red Wine Vinegar
  • 2 cloves garlic, minced
  • 1 1/2 tsp. fresh or 1/2 teaspoon dried basil
  • 1 1/2 tsp. fresh or 1/2 teaspoon dried oregano
  • 2 tsp. Eden Shoyu Soy Sauce

Cook pasta as package directs, rinse, drain and place in a mixing bowl. Add olives, tomatoes, onion and parsley. Prepare the dressing by mixing all ingredients. Pour the dressing over the pasta ingredients and mix thoroughly. Serve room temperature or chilled.
