  • 1 box Purity Foods Vita-Spelt Rotini
  • 1/4 C. olive oil
  • 2 cloves garlic, crushed or chopped
  • 1/4 C. chicken stock or bullion
  • 1/8 C. white wine (you can use all chicken stock if you do not want to use wine)
  • 1/8 tsp. red pepper flakes or to taste
  • 1/2 C. fresh basil leaves, chopped
  • 1 C. chopped plum tomatoes or cherry tomatoes, cut in half
  • 1/4 C. fresh shaved parmigiana cheese, or to taste
  • salt to taste
  • fresh ground pepper to taste

Heat oil over medium/high heat then lower and simmer with garlic for about 3-5 minutes to release flavor. As that simmers, cook pasta according to package directions.  After a few minutes, add the chicken stock, wine and red pepper flakes to oil. Simmer another 2-3 minutes. In bowl add chopped basil and tomatoes. Drain pasta when done (reserving a bit of pasta water) and add to bowl with basil and tomatoes. Pour hot oil mixture on top of pasta and toss together. Add parmigiana cheese and salt and pepper to taste. If pasta seems dry you can add a bit of the pasta water or a touch more chicken stock or wine if used.
