  • 1 pkg. Eden Organic Spelt Spaghetti
  • 3 Tbs. Eden Selected Extra Virgin Olive Oil
  • 2 cloves garlic, minced
  • 2 C. broccoli florets
  • 1 C. cauliflower florets
  • 1 C. zucchini, sliced
  • 1 C. carrots, sliced thin
  • 1/2 C. artichoke hearts, water packed, quartered
  • 1/2 tsp. Eden Sea Salt
  • 2/3 C. water
  • 1/4 tsp. freshly ground black pepper, or to taste
  • 2 Tbs. fresh basil, finely chopped

Cook pasta as package directs, drain and set aside. Heat oil in a large skillet, sauté garlic for 1 to 2 minutes. Add broccoli, cauliflower, zucchini, carrot, artichoke and sea salt. Sauté for 2 to 3 minutes. Add water, cover, steam 2 minutes. Turn off flame, add pepper, pasta and basil. Toss thoroughly and serve.
