  • 1 Tbs. Eden Selected Extra Virgin Olive Oil
  • 1 pkg. Eden Organic Spelt Ziti Rigati
  • 1 C. roasted red pepper, coarsely chopped
  • 1 pkg. (10 oz) frozen chopped spinach
  • 1 1/2 C. organic tofu, pureed
  • 4 fresh basil leaves, torn
  • 3/4 C. grated organic parmesan cheese
  • 1 clove garlic, minced
  • pinch freshly grated nutmeg
  • 1 tsp. Eden Sea Salt
  • 1/2 tsp. freshly ground pepper
  • 2 Tbs. freshly grated parmesan cheese

Preheat oven to 325 degrees. Oil an 8-inch spring-form pan. Cook pasta per package directions, drain and rinse. In a large bowl, mix pasta, red pepper and spinach and set aside. In another bowl combine tofu, basil, parmesan, garlic and nutmeg. Season with salt and pepper. Add to pasta bowl, gently stir until well combined. Transfer to prepared pan. Smooth top and sprinkle with parmesan. Bake until golden brown, 40 to 50 minutes. Let stand 10 minutes before removing spring-form. Serve warm or at room temperature.
