Apples and rice might not sound appealing at first, but this combo is actually pretty tasty. It’s sweet with a tinge of flavor from the herbs. There are so many bold flavors in this pilaf, it’s definitely worth a try; it won’t disappoint.

  • 1 C. wild rice
  • 1 ½ C. apple juice
  • 1 ½ C. chicken broth
  • 3 Tbs. butter
  • 1 Tbs. Dijon mustard
  • 1 bay leaf
  • ½ large white onion, diced
  • 1 large sweet red apple, chopped
  • 3 tsp. garlic, minced
  • 2 tsp. apple cider vinegar
  • ¼ tsp. dried parsley
  • ¼ tsp. oregano
  • ¼ tsp. dried thyme
  • ½ C. dried cranberries
  • ½ C. toasted pecans, chopped
  • Salt and pepper

In a large nonstick skillet, bring the apple juice, chicken broth, dijon mustard, a tablespoon of the butter, oregano, thyme, and parsley and bay leaf to a boil. Add in the rice and lower the heat to a simmer for 45-60 minutes stirring frequently. Drain the rice and set it aside. Melt the other two tablespoons of butter in the skillet and saute the onions and apples until they’re tender. Add in the garlic and stir for 30 seconds. Pour the rice back in and add the remaining ingredients and toss everything together.
