  • 2 C. flour
  • 1 C. sugar
  • 1 ½ C. brown sugar
  • 3-4 bananas
  • 1 tsp. baking soda
  • 1 tsp. cinnamon
  • 1 tsp. nutmeg
  • Dash salt
  • 2 tsp. vanilla extract, divided
  • 2 eggs
  • 2 sticks butter, unsalted and softened
  • 1 C. walnuts, chopped
  • ½ C. vanilla yogurt, divided
  • 4 oz. cream cheese
  • 1/3 C. powdered sugar

Preheat oven to 350 degrees. In a large bowl, mash bananas. Add in butter, sugar, and brown sugar; cream together until smooth. Whisk in eggs and 1 teaspoon of vanilla. In a separate bowl, combine flour, baking soda, and salt. Stir into wet ingredients until well combined and briefly mix in ¼ cup of yogurt and walnuts. Pour into cupcake liners and bake for 20 minutes until an inserted toothpick comes out clean. Meanwhile prepare the frosting by beating together cream cheese, powdered sugar, yogurt, and 1 teaspoon of vanilla. If your frosting is too thin, add more powdered sugar and if it is too thick, add more yogurt. Garnish cupcakes with extra walnuts.
