Directions

To make the chai tea, bring the water and spices to a boil in a medium saucepan. Whisk the spices into the water. Once the water begins to boil, turn off the heat and allow the spices to steep for 5 minutes. After the 5 minutes, turn the heat back on and add the black tea bags and syrup. Return the water to a sight boil, then turn off the heat. Steep for 5 minutes, then remove the tea bags. Strain the tea through a fine mesh sieve. Set aside 1/2 C. tea and store the remaining in the fridge for up to 2 weeks. To make the latte, bring the milk, maple syrup, and cinnamon to slight boil in a medium saucepan. Stir often until the sides of the milk begin to buble. Remove the pan from the heat and using an immersion blender, blend the milk until frothy. Pour the 1/2 C. chai tea into a mug and slowly add the warm, frothy milk to the tea. Sprinkle the top with cinnamon, if desired.
