Ingredients

  • 2 lb. boneless chicken breasts, cut into pieces
  • 1 lb. chorizo, sliced
  • 1 onion, diced
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 2 stalks celery, diced
  • 1 (28 oz.) can diced tomatoes (with juice)
  • 4 cloves garlic, minced
  • 2 C. chicken broth
  • 1 T. Cajun spice
  • 1 tsp. thyme
  • 1 tsp. oregano
  • 2 C. long-grain rice
  • Parsley for garnish

Directions

Add in all of your ingredients except for the rice into a greased crockpot. Cook on low for 5 hours, stir in rice, and cook on high for an additional 30 to 45 minutes until rice is cooked through. Garnish with fresh parsley and serve.
