These great spiced chicken satay will be a great appetizer for any gathering. Serve up with peanut chili dipping sauce to pull your appetizer together.

  • 3 Tbs. fresh lime juice
  • 1 tsp. curry powder
  • 2 tsp. honey
  • 1/2 tsp. ground coriander
  • 1/2 tsp. ground cumin
  • 1/8 tsp. salt
  • 2 cloves garlic, minced
  • 1 lb. boneless skinless chicken breast halves, cut into 1-inch cubes
  • Peanut Sauce Ingredients:
  • 2 Tbs. peanut butter
  • 1 Tbs. fresh lime juice
  • 1 1/2 tsp. soy sauce
  • 1 Tbs. sugar
  • 1/4 to 1/2 tsp. dried hot red pepper flakes
  • 1/4 tsp. salt

To make the peanut sauce whisk together sauce ingredients in a large bowl until blended.  Set aside for when the chicken is done.  

When you make your chicken begin by mixing together lime juice, curry powder, honey, coriander, cumin, salt and garlic until well mixed. Place chicken in resealable plastic bag or shallow glass or plastic dish. Pour lime-juice mixture over chicken; stirchicken to coat with lime-juice mixture. Cover and refrigerate 2 hours, stirring occasionally.

Set oven to broil. Spray rack in broiler pan with cooking spray. Remove chicken from marinade. Place chicken on a stewer stick and then on rack in broiler pan.

Broil with tops about 3 inches from heat for 4 minutes. Turn; brush with marinade. Broil 4 to 5 minutes longer or until chicken is no longer pink in center. Discard any remaining marinade.  Serve with peanut sauce.
