  • Cake:
  • 1/2 C. butter
  • 2 1/4 C. brown sugar, packed
  • 2 eggs
  • two 1-oz. squares unsweetened chocolate, melted
  • 1/2 C. buttermilk
  • 2 tsp. vanilla
  • 1 C. boiling water
  • 2 tsp. baking soda
  • 2 1/4 C. flour
  • 1/2 C. peanuts, chopped
  • Ganache:
  • 2/3 C. heavy whipping cream
  • 6 oz. semisweet baking chocolate, chopped

Begin making the cake by preheating oven to 400 degrees.  Grease an 11x15 inch jelly roll pan.  Cream butter and brown sugar.  Add eggs and beat until fluffy.  Stir in chocolate, buttermilk, vanilla, chopped peanuts, and water mixed with baking soda.  Blend in flour. Pour into prepared pan.  Bake 20 minutes or until toothpick inserted into center comes out clean. Cool for 20 minutes before adding your chocolate ganache.  

To make the ganache begin by heat whipping cream over low heat until hot but not boiling; remove from heat. Stir in chocolate until melted. Let stand about 5 minutes. Ganache is ready to use when it mounds slightly when dropped from a spoon. It will become firmer the longer it cools. Finally pour the ganache carefully onto top center of cake and spread evenly with a large spatula.
