  • 1 head broccoli, cut into florets
  • 6 oz. couscous
  • 1/2 tsp. cinnamon
  • 1/2 tsp. cumin
  • 1/2 tsp. coriander
  • 8 oz. halloumi cheese, sliced
  • 1/2 C. cherry tomatoes, halved
  • 1 Tbs. lemon juice
  • Tortilla wraps

Boil broccoli in saucepan with water for 8 to 10 minutes. Mix couscous with spices in bowl. Pour over hot broccoli. Cover and leave to stand for 5 minutes. Heat frying pan and cook halloumi for 2 minutes on each side or until lightly brown. Mix tomatoes and lemon juice into couscous. Add mixture to tortillas and top with halloumi. Wrap tortillas and serve.
