  • ½ C. coconut oil, melted
  • ½ C. dark brown sugar
  • 1 C. sugar
  • 1 ¾ C. all purpose flour
  • ½ tsp. salt
  • ¼ tsp. ground cloves
  • ¼ tsp. nutmeg
  • 1 tsp. vanilla extract
  • 1 tsp. baking soda
  • 2 tsp. cinnamon
  • 2 eggs
  • 1 can of pumpkin pure3

Preheat the oven to 375 degrees. Place 12 liners into a 12 C. lined muffin tin. Grease each liner with a non-stick cooking spray. Mix together the dry ingredients. In another bowl, mix the reaming ingredients. Pour the second mixture into the first one. Scoop out the batter evenly into each muffin tin. Bake for 20-25 minutes. Remove from oven and sprinkle powdered sugar over the muffins, if desired.
