  • 3 C. flour
  • 2 tsp. baking soda
  • 1 tsp. baking powder
  • 1 tsp. cinnamon
  • 1 tsp. ginger
  • Dash nutmeg
  • 3 eggs
  • 1 C. sugar
  • ½ C. brown sugar
  • 1 C. plain Greek yogurt
  • 1 (15 oz.) can pumpkin puree
  • ¾ C. vegetable oil
  • 1 C. walnuts, chopped
  • Powdered sugar for dusting

Preheat oven to 350 degrees. In a bowl, combine flour, baking powder, baking soda, cinnamon, ginger, and nutmeg; set aside. In a large bowl, use and electric mixer to beat eggs for about 3 minutes. Beat in sugar for 7 to 8 minutes until mixture is pale and thick. Beat in pumpkin and slowly add in oil. Briefly mix in flour mixture on slow speed. Stir in walnuts by hand, transfer batter to a heavily greased cake pan, and bake for an hour until an inserted knife comes out clean. Let cool, dust with powdered sugar, and serve.
