Spiced-Up Rice

Ingredients
- 1 C. raw converted rice
- 2 1/2 C. chicken broth
- 2 cloves garlic, pressed
- 1 onion, chopped
- 1 C. celery, minced
- 1/2 tsp. salt
- 1 tsp. ground cumin
- 1/2 tsp. ground ginger
- 1/4 tsp. ground turmeric
- 1/8 tsp. cayenne pepper
- 1/2 C. raisins
- 1 C. frozen peas, thawed
- 1/2 C. green onion, sliced
Directions
In a large skillet, combine rice with chicken broth, garlic, onion, celery, seasonings, and raisins. Bring to a boil. Cover. Simmer 20 minutes or until rice is tender. Stir in peas and green onion. Heat through.
