  • 2/3 cups & 3 tablespoons of all-purpose flour
  • 6 tablespoons of sugar
  • 2 tablespoons of whole wheat flour
  • 1 ½ teaspoons of baking powder
  • 1 ¼ teaspoons of ground ginger
  • ½ teaspoon of ground cinnamon
  • ¼ teaspoon of baking soda
  • 1/8 teaspoon of salt
  • 1/8 teaspoon of ground coriander
  • 1/8 teaspoon of ground nutmeg
  • A pinch of ground cloves
  • Pinch of ground white pepper
  • ¾ cup of buttermilk
  • 2 tablespoons of honey
  • 1 egg
  • ½ teaspoon of grated orange peel
  • 2 tablespoons of unsalted butter, melted
  • Apple Cider Maple Syrup:
  • 1 cup of apple cider
  • 1 cup of maple syrup

In a large mixing bowl, whisk the dry ingredients.
In a separate bowl, whisk the buttermilk, honey, egg yolk, and grated orange peel in. Once the wet mixture is mixed nicely, combine with the dry ingredients. Then, add the melted butter.
In another separate bowl, beat the egg white until stiff but not dry. Incorporate the egg white into the batter.
Using a nonstick spray, spray an 8- to 9-inch square waffle iron and preheat. Pour 1 cup of the batter into the waffle iron. Close the top and cook until it is golden brown .Transfer waffle on cooling rack to cool. Repeat this process with remaining batter.
In a small sauce pan, combine the apple cider and maple syrup and bring it to a boil. Stir every 2 minutes to prevent the syrup from burning. Once a syrup has a thick consistency, turn off the heat.
Serve the waffles on a plate and drizzle a good amount of syrup.
