This refreshing salad is a light blend of cabbage, green onions, cucumbers and shredded chicken. It's topped with a spicy chili-sesame vinaigrette, giving it plenty of zesty flavor.

  • 1 rotisserie chicken
  • 2 heads Chinese green cabbage, shredded
  • 2 cucumbers, diced
  • ½ C. green onion, chopped
  • ½ C. sweet chili garlic sauce
  • 6 tbs. honey
  • 5 tbs. sesame oil
  • 3 tbs. vinegar
  • 4 tbs. fresh-squeezed lime juice
  • 2 tsp. wasabi paste

Remove meat from rotisserie chicken and shred. Discard bones and transfer chicken to a large bowl.

Add cabbage, cucumbers and green onions to bowl. Gently toss until ingredients are well blended. Cover and refrigerate for 1 hour.

Combine garlic sauce, honey, sesame oil, vinegar, lime juice and wasabi paste in a small bowl. Whisk ingredients well. Cover and refrigerate for 1 hour.

Drizzle dressing over salad and gently toss to combine.
