  • 1 lb. ground pork
  • 2 cloves garlic, minced
  • 1 T. curry powder
  • 1 tsp. red pepper flakes, divided
  • Salt and pepper to taste
  • 1 can coconut milk
  • 2 T. hot sauce
  • 1 tsp. honey
  • 1 T. paprika
  • 6 eggs
  • Red chili peppers, sliced

Preheat oven to 350 degrees. In a large bowl, combine pork, garlic, curry powder, ½ tsp. red pepper flakes, salt, and pepper. Form into 10 to 12 meatballs and transfer to a greased baking dish. In a bowl, combine coconut milk, hot sauce, honey, paprika, and remaining red pepper flakes. Pour over meatballs and bake for 20 minutes until cooked through. In a separate baking dish, beat eggs and season with salt and pepper. Add in meatballs, top with chili peppers, and bake for 20 minutes until firm.
