  • 2 T. paprika
  • 1 T. sea salt
  • 1 T. white sugar
  • 2 tsp. garlic powder
  • 2 tsp. onion powder
  • 2 tsp. dried thyme
  • 1 tsp. dried oregano
  • 1 tsp. cumin
  • 1 tsp. ground black pepper
  • 1/2 tsp. cayenne pepper
  • 12 oz. beer, room temperature
  • 1/4 C. butter, melted
  • 2 T. Worcestershire sauce
  • 1 T. hot sauce
  • 2 racks spare ribs

In a small bowl, stir together paprika, salt, sugar, garlic powder, onion powder, thyme, oregano, cumin, black pepper, and cayenne pepper. In a medium bowl, stir together beer, melted butter, Worcestershire, and hot sauce. Generously season both slabs of ribs with dry rub. Preheat your grill to 225°F. Add chunks of wood when the grill reaches cooking temperature. Place ribs in a roasting pan, meat side-up, and smoke for three hours. Brush ribs with half of the liquid seasoning, cover with foil, and continue to cook for another hour. Remove foil and cook for another hour. Remove ribs, brush with remaining liquid, and serve immediately.
