  • 1 red onion, chopped
  • 2 tablespoons olive oil
  • 1 carrot, diced
  • 4 cloves garlic, minced
  • 1 tablespoon flour
  • 1½ lb dried black beans, rinsed and drained
  • 1 tablespoon pickling spice
  • 2/3 teaspoons red pepper flakes
  • 1/3 cup sour cream
  • salt
  • pepper

Heat the oil in a large skillet and toss in 1 red onion, cooking until tender. Add the carrots and garlic, sprinkling with the flour and stirring for 5 minutes, or until slightly browned. Add 2 tablespoons water, mix well and transfer to crockpot. Add the beans, pickling spice, red pepper flakes and 8 cups of water. Cover and cook for 6 hours. Remove 2 cups of beans from crockpot and blend with sour cream until smooth. Return the blended contents to the crockpot and season with salt and pepper. Mix well and serve.
