  • 6 medium flour tortillas
  • 2 large sweet potatoes, cubed and washed
  • 1 (15 oz.) can black beans, drained
  • 1 ¼ C. shredded cheddar cheese
  • 1 red onion, julienned
  • 1 green bell pepper, julienned
  • 1 red bell pepper, julienned
  • Spice Mix
  • 2 Tbs. garlic, minced
  • 1 Tbs. chili powder
  • 1 Tbs. ground cinnamon
  • 2 tsp. olive oil
  • 1 tsp. cumin
  • 1 tsp. paprika
  • ½ tsp. salt
  • ½ tsp. chipotle chili pepper

Preheat the oven to 425 degrees. Combine all of the spice mix ingredients. Toss the veggies in the mix and bake them for 25 minutes until the potatoes are tender. Heat a skillet on medium-high with a drizzle of olive oil. Scoop the veggie mixture, black beans, and cheese onto one of the tortillas. Place the other on top and place the quesadillas down, cooking them for 5 minutes on each side. Once the outside is golden and crunchy, cut the quesadilla into pieces and serve.
