Ingredients
- 2 C. cooked ham
- one 10-oz. pkg. chopped spinach
- 8 oz. fresh mushrooms
- 1 sm. white onion
- 1/4 C. canned jalapeno peppers
- 3/4 lb. cheddar cheese
- 6 eggs
- 2 C. small-curd cottage cheese
- 1/2 C. butter
- 6 Tbs. flour
Directions
Preheat oven to 350 degrees. Cut ham into 1-inch pieces. Thaw spinach and squeeze out the water. Cut mushrooms into thin slices. Remove skin from onion and cut into 1/4-inch pieces. Drain off water from jalapenos. Grate cheese. Beat eggs until whites and egg yolks are well blended. Mix together all ingredients in a large mixing bowl. Stir well until all ingredients are blended. Pour into a 9x13-inch baking dish. Bake for 1 hour. Let stand for 10 minutes before cutting.
