  • Crust
  • 1 head cauliflower, chopped
  • 2 large eggs
  • ½ C. shredded mozzarella cheese
  • 2 T. freshly grated parmesan
  • 1 T. Italian seasoning
  • Salt (to taste)
  • Pepper (to taste)
  • Toppings
  • ½ C. buffalo-style hot sauce
  • 1 C. pre-prepared pizza sauce
  • 2 C. deli-roasted whole chicken, shredded
  • 1 C. shredded mozzarella cheese
  • ¼ C. crumbled blue cheese
  • ½ C. chopped tomatoes
  • ½ C. chopped banana peppers

Preheat your oven to 425 degrees. Prepare a baking sheet by lining it with parchment paper. Set aside for later.

Make the crust by pulsing cauliflower in a food processor until finely chopped. Transfer the chopped cauliflower to a microwavable safe bowl and heat in the microwave for 4-5 minutes. Let cool. Drain cauliflower using a dish towel or cheesecloth to remove as much water as possible.

Place the drained cauliflower in a large bowl and stir in eggs, mozzarella, parmesan, Italian seasoning, salt, and pepper. Spread the mix into baking sheet and roll out to a 15x10-inch square. Bake for 12-15 minutes or until golden brown.

Remove from the oven and start working on the toppings. Spread the pre-prepared pizza sauce onto the cauliflower crust. In a large bowl mix together the shredded chicken and buffalo sauce. Place the soaked chicken onto the pizza and layer with cheese, tomatoes and banana peppers. Place back in the oven for 5-8 minutes or until the cheese and melted and bubbly. Let cool before slicing and serving.
