Spicy Cajun Shrimp
Ingredients
- 1 lb. jumbo shrimp, finely chopped
- 1/4 C. flour
- 1/2 C. butter
- 1 C. onion, chopped
- 1/2 C. green pepper, chopped
- 1/2 C. celery, chopped
- 1 large clove garlic, minced
- 1/4 tsp. cayenne pepper
- 1 Tbs. lemon juice
- 1 C. water

Directions
Combine flour and butter in a large saucepan. Cook over medium heat, stirring, until it turns golden, about 15-20 minutes. Add the onion, green pepper, celery and garlic and sauté for 20 minutes. Add the shrimp and remaining ingredients. Bring to boil then simmer for 3-5 minutes, or until shrimp are tender. Season. Serve over a bed of rice.
