Spicy Cheddar Chicken
Ingredients
- 2 lb. chicken tenders
- 1/2 C. flour
- 3 Tbs. vegetable oil
- 2 Tbs. butter
- 1 C. chopped onion
- 2 cloves garlic, chopped
- 1 C. sliced button mushrooms
- 1 4 oz. can green chilies
- 1 10 3/4 oz. can cheddar cheese soup
- 1/2 C. chicken stock
- 2 Tbs. flour
- 1/4 tsp. cayenne pepper
Directions
Dredge chicken tenders in flour. Heat the oil in large skillet, brown chicken tenders on both sides until almost done. In a saucepan melt butter and saute onions, garlic and mushrooms until golden. Then add the 2 Tbs. of flour to the onion mix until blended. Then add soup, chicken stock, chilies and cayenne pepper. Simmer until bubbly. Place chicken tenders in baking dish and top with soup mix. Bake at 300 degrees for about 45 minutes or until chicken is done.
