Ingredients

  • 1 pound of ground beef
  • 1 can of sweet corn (15 oz.)
  • 6-8 white potatoes, peeled and sliced
  • 1 can of diced tomatoes (14.5 oz.)
  • 1 cup of Parmesan cheese
  • ¼ cup of hot sauce
  • 1 cup of onion, chopped
  • 1 tablespoon of butter
  • 2 tablespoons of chili flakes
  • 2 tablespoons of garlic powder
  • salt and pepper to taste

Directions

Preheat oven to 350 degrees Fahrenheit.
In a pan, melt the butter over medium heat. Add onions and sauté until soft. Add the ground beef and cook with salt and pepper. Add the tomatoes, hot sauce, chili flakes and garlic powder and cook for 5 minutes. Mix in the corn and cheese and set aside.
Grease a large cast iron skillet and spoon a layer of the pan’s contents onto the skillet. Place the potato slices in the skillet, then pour the rest of the pan’s contents on top.
Cover with foil and bake for 45 minutes.
