  • 1 lb. chicken breasts
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 10 oz. pkg. frozen spinach, chopped
  • 1 C. chicken broth
  • 1 can cream of chicken soup
  • ¾ C. salsa, medium
  • 1 small jalapeno, minced
  • 2 Tbs. chili powder
  • ½ tsp. cayenne pepper
  • 28 oz. can diced tomatoes
  • 1 bay leaf
  • 3.4 C. raw brown rice

Add all the ingredients to the crockpot and cook on low for 6 hours. Remove and discard the bay leaf. Take the chicken out of the crockpot and shred. Add it back to the stew, mix well, and serve.
