  • ½ pound of rotini pasta, cooked to box directions and drained
  • 1 pound of boneless and skinless chicken breast, cut into bite sized pieces
  • 1 cup of zucchini, chopped
  • 1 cup of carrots, chopped
  • 1 large cayenne pepper, finely chopped
  • ¼ cup of apple cider vinegar
  • 1 tablespoon of garlic powder
  • 1 teaspoon of cumin
  • 1 teaspoon of smoked paprika
  • 1 tablespoon of vegetable oil
  • salt and pepper, to taste

In a sauce dish, mix apple cider vinegar with garlic powder, cumin, smoked paprika and salt and pepper. Toss the chicken, zucchini, carrots and cayenne pepper with the mixture in a bowl.
Heat oil in medium-high heat in a large pan. Pour the contents of the bowl into pan and cook for about 15 minutes until everything is cooked. Add the cooked pasta to the pan and mix thoroughly before removing from heat.
Serve in bowls and garnish with fresh herbs, if desired.
