Ingredients

  • 1 lb. chicken breast
  • 2 C. broccoli florets
  • 1 C. mushroom, sliced
  • ¼ C. chicken broth
  • ¼ C. oyster sauce
  • 1 egg
  • 1 (6 oz.) can of water chestnuts
  • ½ C. baby corn
  • 2 cloves of garlic, minced
  • 2 tsp. ginger, minced
  • 2 tsp. olive oil
  • 2 tsp. sesame oil
  • 1 tsp. pepper
  • 1 tsp. crushed red pepper
  • 1 tsp. soy sauce
  • ¾ tsp. cornstarch
  • Salt and pepper to taste

Directions

In a large skillet or wok, heat the olive oil and pan fry the chicken and set it aside. In the same skillet, saute the ginger and garlic for about 2 minutes. Add in the rest of the veggies and saute for about 10 minutes or until they’re tender. Next, add in the oyster sauce, soy sauce, cornstarch, and seasonings. Dice the chicken breast and throw that in as well. Stir well and add in the egg. Stir this until the egg is set and serve.
