Spicy Chicken Chili

Easy delicious chili with only a few ingredients.

  • 1 48-oz. jar Great Northern Beans
  • 1 16-oz. jar salsa (mild, medium, or hot depending on taste)
  • 4 boneless, skinless chicken breasts, cooked and cubed
  • 1 8-oz. pkg. shredded Monterey Jack cheese
  • 1 8-oz. pkg. jalapeƱo cheese, cubed
  • 1 C. water

Add all ingredients to a large pot, heat over low heat until cheeses melt. Stir in water for desired consistency (no more than 1 cup); heat until warmed through.

  • Haven't tried it yet but plan to with a couple changes. You didn't specify size of chicken breasts but I would suggest at least 1 to 1&1/2 lb. & I don't see the need to pre-cook it. I'll also use 1 cup chicken stock in place of water, add some cumin & chili powder to taste; throw everything except cheese in the crockpot & cook on high for 4 hours. Either turn the crockpot off or on warm & then add the cheese so it won't scorch but will be melted thoroughly. Sounds great, esp

  • How about a crock pot cooking to really let the flavor simmer in? Cheese can be added toward the end.
