  • 1 lb. chicken
  • 6 tomatillos
  • 2 large onions
  • 3 garlic cloves
  • 2 chayote squash
  • 10 fresh serrano peppers
  • 1 Tbs. vegetable oil
  • 2 cups chicken broth
  • 1 tsp. salt
  • 1 tsp. pepper

Remove skin and bones from chicken. Cut into 1-inch cubes. Skin tomatillos and quarter slice. Peel and quarter onions. Peel and mince cloves. Remove rind and seed from squash. Cut into 1-inch pieces. Remove stems and seeds from peppers and split in half. Pour ingredients into crockpot and cook on low for 4 to 5 hours.
