Spicy Chicken Enchiladas

- 4 chicken breast, boneless
- 1/2 tsp. low-fat sour cream
- 1 C. shredded mozzarella cheese
- 1/3 C. chopped green bell pepper
- 8 corn tortillas
Preheat oven to 350 degrees F. In a medium skillet place the chicken and add the onion, sour cream, and cheddar cheese. Heat until cheese melts. Stir in all of the ingredients listed. Roll even amounts of the mixture in the corn tortillas. Arrange in a 9x13 inch baking dish and bake for about 20 minutes. Top it off when ready with some shredded cheese.
