Who doesn't love a warm bowl of chili topped with shredded cheese and a dollop of sour cream? The comforting dish has been transformed into a fiery casserole filled with ground beef, Mexican cheeses, sour cream, and rice.

  • 1 lb. Ground Beef
  • 1 tsp. Salt
  • 2 tsp. Garlic Powder
  • 2 tsp. Onion Powder
  • 2 C. Long Grain Rice, cooked
  • 1 tsp. Chili Powder, plus additional to taste
  • 1/2 C. Sour Cream
  • 2 C. Shredded Mexican Cheese Blend
  • 2 C. Tomatoes, chopped

Preheat oven to 350 degrees. Grease an 8x8" casserole dish with nonstick cooking spray. In a large skillet over medium-high heat, mix together the ground beef, salt, garlic powder and onion powder. Cook until the meat has browned and set aside. In a medium bowl, mix together rice and chili powder. Layer in the casserole dish, in order, the sour cream, cheese, rice, beef and tomatoes. Repeat layering process as many times necessary, topping the casserole with a layer of cheese. Bake for 30-45 minutes or until a meat thermometer inserted into the center of the casserole registers 160 degrees.
