  • 2 15 oz. cans Chili Beans
  • 2 10.5 oz. cans Cream of Mushroom Soup
  • 1 1/2 C. Sour Cream
  • 1 C. Mild Salsa
  • 1 Small Red Chili Pepper, finely minced
  • 4-5 C. Cooked Rotisserie Chicken, shredded
  • 10 6" Flour Tortillas, torn into bite-sized pieces
  • 3 C. Shredded Mexican Cheese Blend, divided

Preheat the oven to 350 degrees. In a medium-sized mixing bowl, combine the chili beans, soup, sour cream, salsa, and minced chili pepper. Spread half of the rotisserie chicken across the bottom of a 9x13" baking dish. Layer over the chicken, in order, half of the tortillas pieces, half of the chili bean sauce, and 1 cup of the cheese blend. Repeat the layering process with the remaining halves of the chicken, tortilla pieces, and chili bean sauce, then sprinkle the top of the casserole with the remaining cheese. Bake for 45 minutes until casserole is warmed through and cheese is melted.
