  • 2 T. sesame oil
  • 1 lb. ground turkey
  • 1 bunch scallions, thinly sliced
  • 2 cloves garlic, minced
  • 1 T. fresh grated ginger
  • 4 C. chicken broth
  • ¾ C. water
  • 8 oz. dried Chinese noodles
  • 1 tsp. crushed red pepper flakes
  • ¼ C. soy sauce
  • 1 T. rice vinegar
  • 1 cucumber, peeled and chopped

In a skillet, heat oil and cook turkey with garlic, ginger, and scallions until no longer pink. In a large saucepan, add in broth, water, noodles, soy sauce, red pepper flakes, rice vinegar, and cucumber. Bring to a boil, reduce heat, simmer for 5 to 10 minutes until everything is tender, and stir in turkey mixture. Heat through and serve.
