  • 10 eggs
  • 1/2 green pepper, chopped
  • 1-2 C. onion, chopped
  • sea salt and pepper, to taste
  • dried oregano, to taste
  • dill, minced

Preheat the oven to 350 degrees. Brown the chorizo in the skillet for 8 to 10 minutes. In a bowl, whisk the eggs in a large bowl. Add in the green pepper, onion, salt, pepper, and oregano to the eggs. Whisk well to combine. Add the browned chorizo to the bowl and stir to combine. Pour the egg mixture into a 13x9 baking dish and sprinkle with fresh dill. Bake for 30 minutes, or until the center has set.
