Ingredients

  • 6 Small Flour Tortillas
  • 7 Ounces of Chorizo Sausage
  • ½ Cup of Hot Sauce
  • 1 Cup of Shredded Cheddar Cheese
  • 3 Eggs
  • 3 Tablespoons of Chopped Cilantro
  • 1 Tablespoon of Lime Juice
  • ¼ Cup of Crumbled Chihuahua Cheese
  • ½ Cup of Salsa
  • 1 Minced Garlic Clove
  • 4 Sliced Green Onions
  • 1 Tablespoon of Olive Oil
  • 1 Pinch of Salt
  • 1 Pinch of Pepper

Directions

Begin by pouring the olive oil, lime juice, hot sauce, and garlic into a large skillet and heating it up over a medium-high heat. Add in the sausage, cooking it through and breaking it up with a fork or spoon, for about 5 minutes before adding in the green onion for another 3 minutes. Then, whisk together the eggs, ½ of the cilantro, the shredded cheddar cheese, the salt, and the pepper and pour this mix over the sausage and stir it for another 2-5 minutes.

Warm your tortillas in a skillet over a high heat, flipping often until bubbles begin to rise on the surface of each. Layer them together so that you have three stacks of two tortillas each and spoon the egg and sausage mix into the center of each. Add in the salsa, chihuahua cheese, and remaining cilantro and serve warm!
