This stew is a warm and spicy mixture of apples, Tabasco, Brussels sprouts, and pork. It't the perfect dish for a cold fall evening. Serve it with some crusty bread for dipping.

  • 2 Tbs. flour
  • 1 tsp. salt
  • 2 lb. boneless pork shoulder, cut into pieces
  • 2 Tbs. oil
  • 1 large onion, chopped
  • 1 C. apple cider
  • 1 C. chicken broth
  • 1 Tbs. fresh parsley, chopped
  • 2 1/2 tsp. Tabasco sauce
  • 3 C. butternut squash chunks
  • 2 C. Brussels sprouts, halved
  • 1 large apple, peeled, cored, and chopped

In a bowl, combine the flour and salt. Add in the pork pieces and toss to coat. Heat the oil in a skillet over medium-high heat and add in the pork. Brown well on all sides, then put the pieces into the crockpot. Add the onion, apple cider,chicken broth, parsley, and Tabasco sauce. Stir, cover, and cook for 2 hours on high. Add in the squash, Brussels sprouts, and apple. Cover and cook for another 2 hours. Stir occasionally.
