  • 3/4 C. fresh cilantro leaves
  • 3/4 C. sour cream
  • 2 Tbs. lime juice
  • 2 Tbs. olive oil
  • sea salt and pepper
  • 1 small red cabbage, halved, cored, and shredded fine
  • 1 small jalapeno, seeded and diced fine
  • 2 scallions, sliced thin
  • 1 rotisserie chicken, shredded, skin and bones removed
  • 6-12 (8-in) warm flour tortillas

In blender, combine the cilantro, sour cream, lime juice, and oil. Puree until smooth and season with salt and pepper to taste. Put the cilantro mixture into a bowl and add the red cabbage, jalapenos, and scallions. Mix to coat well and let sit for at least 15 minutes at room temperature. Add the chicken to the bowl and toss until the chicken is coated. Season with salt and serve in warm tortillas.
